What Types of Pizza Crusts Are There?

Chicago-style deep dish

One of the Windy City’s claims to fame, Chicago-style deep dish pizza is a local favorite. The crust style is unique in its preparation, baking and taste. Pizza makers oil and butter a cast iron pan to prepare it for the dough. After they spread the dough in the pan, they add the layers of topping, cheese and tomato sauce. The pizza is then cooked for 45 minutes. During that time, the dough soaks in the fat and flavors of the toppings, creating a thick, tasty pizza.

Sicilian style

Also known as Detroit style, this pan pizza is probably the most popular type of pizza crust for deep-dish style. The dough has a high water and oil content, which creates a fluffy crust. Pizza makers create this style by using a deep baking sheet which is coated with olive oil. This cooking method results in a crispy pizza bottom and a fluffy interior.

Double-dough/stuffed crust

To make a double-dough pizza, pie-makers simply place two layers of dough on top of one another. This creates a thick crust that is less dense than other thick-crust styles. A popular variation of double-dough is stuffed crust. Making this style involves stuffing cheese into the outer crust of the pizza. The delicious crust often changes pizza-eating habits: people turn their slice around and eat the crust first!

New York style

This type of pizza is usually cooked for around 15 to 20 minutes. It is known for its large slices and floppy finish, which allows eaters to fold the pizza slice for eating. The dough includes oil and sugar, which allows pizza makers to brown the dough at lower temperatures for even cooking.

St. Louis style

Quite the contrast from its neighboring Chicago style, this pizza features a very thin and very crunchy crust made of unleavened dough. On top, you’ll find provel cheese, which is a blend of swiss, cheddar and provolone. Due to its cracker-like crust, this style of pizza is often served in rectangular pieces rather than pie slices.
